Cowboy cookies take me back to my grandparents house. My grandma was the woman who always had a treat for everybody when they stopped by the house. You would find glass containers of M&Ms, Snickers, mints, nuts, cookies… almost anything you could think of! But when the Cowboy Cookies were on sale at Publix, she made sure to stock up on those for my grandpa.
The recipe for these cookies started out with just wanting to make a simple peanut butter cookie. Well, the first batch of those came out deliciously, but I found myself thinking, “How can I make these even better?” and that’s where these cowboy cookies came from.
Traditionally, these cookies would also have pecans in them, but because of already having two kinds of nuts via the peanut butter and almond flour, I decided to leave them out. You can certainly add them if you wish!
I get most of my baking ingredients from Thrive Market as it’s easy to find simple, organic ingredients that might be more difficult to find at the store. For instance, their squeezable peanut butter has only peanuts for the ingredients! For the chocolate chips, I always use Enjoy Life.
The Method
These cookies are literally as simple as BLEND and MIX. Add all of the ingredients, except for the mix-ins into a food processor and blend until the oats are broken down. Taste to see if it’s sweet enough… You can always add extra honey if you need! Then stir in the shredded coconut, chocolate chips, and oats until combined!
Use your hands to form little patties and line them up on a lined baking sheet. Bake for 10-13 minutes and voila! Start out with 10 minutes and if you’d like them crispier, leave them in a little longer. Let cool before enjoying!
Preheat oven to 350 Fahrenheit. Then combine first 7 ingredients in a food processor or blender until the oats are broken down and everything is combined. Remove blade from food processor and stir in the extra oats, shredded coconut, and chocolate chips. Add more if you'd like! Line a baking sheet with parchment paper or a silicone mat. Roll dough into balls and pat them down to form a cookie. You should wind up with 12 cookies. Place them 1 inch apart and bake for 10-13 minutes depending on if you like them soft or crunchy!
