Jalapeno Cheddar Burger Bowls

Hey friends! I am SO excited about the recipe I’m bringing to you today… Jalapeno Cheddar Burger Bowls! This recipe is for those of you that love a little kick. It uses two of my favorite ingredients (jalapeno and cheese, duh!) to hold the meat together and make for a really delicious burger! Can you imagine serving these at a cook-out? They would be a hit for sure!

Before we get into the recipe, lets talk TOPPINGS! We like to eat ours on a bed of lettuce, but you could throw these babies on a bun and it would take them to the next level. I also caramelize sweet onions and mushrooms anytime we make burger bowls and they are divine. For veggies, we always like an avocado and my husband asks for a fried egg every time. This is one of his favorite meals I make… even without the jalapeno and cheddar!

I usually do not have a ton of time to spend on dinner and this meal comes together really quickly. First, I like to start on the oven fries, so they can be cooking while I make the burgers. Preheat the oven, line a pan with parchment paper, and cut four russet potatoes in half length-wise and then into wedges. Then, toss them in a generous pour of olive oil, salt, and pepper. That’s it! Spread the potatoes on the pan in one even layer and let them cook while we make the meat!

If you’re caramelizing onions and mushrooms (highly recommended!), I would go ahead and put them on at this point so that all I have to do is stir them. Now, for the meat! We don’t have a grill, so I really like to cook my burgers in a cast iron skillet like this super affordable one! All you need now is a pound of ground beef, one whole jalapeno, and a half cup of cheddar cheese. Separate them into four even portions and form them into a ball in your hands. Place a piece of plastic wrap or foil over the balls and press down firmly with the bottom of a bowl until they are flattened into even patties. Generously sprinkle salt and pepper and carefully place them on the hot skillet.

This is where you decide how long to cook for! Some people like a little pink in the middle. I usually cook mine for about 3 minutes on each side. When they’re cooked to your desired done-ness, serve on top of lettuce or a bun with your favorite toppings and enjoy! I like eat mine with those oven fries and some Sir Kensington’s Special Sauce!

Jalapeno Cheddar Burger Bowls

  • Yield: 4 servings
  • Prep Time: 15 minutes
  • Cook Time: 20 minutes

Ingredients

  • 1 lb ground beef
  • 4 russet potatoes
  • 1/2 cup shredded cheddar cheese
  • 1 large jalapeno - finely diced
  • 2 tbsp olive oil
  • salt
  • pepper

Instructions

  1. Preheat oven to 425 degrees F and line a pan with parchment paper.

  2. Cut potatoes in half lengthwise and then slice into thin wedges. Coat in olive oil, salt, and pepper, and transfer to lined pan. Bake for 25-30 minutes or until they're slightly browned.

  3. In a mixing bowl, combine ground beef, cheddar cheese, and jalapeno. Divide into four even servings and form into balls, placing them on a clean surface or cutting board.

  4. Place a piece of plastic wrap or foil over the meat and firmly press each ball down with the bottom of a bowl to form a patty. Sprinkle each patty with a generous amount of salt and pepper.

  5. Heat a well-seasoned cast iron skillet over medium heat. When fully heated, carefully place each patty on the hot skillet. Cook for 3 minutes per side, or until burgers reach desired done-ness.

  6. Remove potatoes from oven when they're fully cooked and serve with burgers over a bed of lettuce or bun and with desired toppings. Enjoy!
