Gluten Free Berry Cobbler

Cobbler is one dish that reminds me so much of summertime and childhood. I remember my mom making it when we would have family over for “supper” on Sundays. We would eat it warm with a scoop of ice cream after our meal and then be in a sugar coma for the rest of the day.

Luckily, I have recreated cobbler to be much more nutritious and still be a wonderful sweet treat for you and your family. This gluten free cobbler recipe is also vegan (as long as you choose a sweetener besides honey), and refined sugar free! It won’t leave you with a sugar crash and is super satisfying.

While this recipe calls for strawberries and blueberries (which would be super great for 4th of July!), you could make this with almost any fruit. You could try it with just one of the berries or something completely different like cherries!

Berry Crumble Cobbler

  • Yield: 8 servings
  • Prep Time: 30 minutes
  • Cook Time: 30 minutes

Ingredients

  • FOR THE CRUST/CRUMBLE
  • 1 cup almond flour
  • 1 cup oats
  • 4 TBSP coconut oil (softened)
  • 5 TBSP honey or maple syrup
  • pinch of salt
  • FOR THE FILLING
  • 1 lb strawberries (stems removed and diced)
  • 1 1/2 cups blueberries
  • 4 TBSP sweetener (I used coconut palm sugar, but you could use honey or maple syrup)
  • 1 tbsp arrowroot starch

Instructions

  1. First, prepare the berry filling by dicing the strawberries, washing the berries, and adding them to a small pot. Simmer over a medium-low heat for about 30 minutes, stirring occasionally. Add sweetener and tablespoon of arrowroot starch as the berries reduce. Berries should reduce and be thick and syrupy.

  2. Preheat oven to 350 Fahrenheit and grease a 9x9 baking dish. Then, prepare the crust/crumble by combining all crust ingredients completely.

  3. Assemble the cobbler by pressing half of the crumble mixture into the bottom of the baking dish, then spread the berry mixture evenly over that. Finish it off by crumbling the remaining crumble mixture on top. You may not need to use the entire crumble mixture. Use your best judgement depending on how much your berries reduced.

  4. Bake for approximately 30 minutes or until the top of the crumble cobbler turns golden brown. Serve warm with a scoop of vanilla ice cream and enjoy!
