Salted Chocolate Granola

Jessie here. Back with another recipe. Now, I don’t know about you, but I. LOVE. GRANOLA. I wasn’t always a huge granola fan, but when I tried Purely Elizabeth granola, I fell in love. Unfortunately, buying pre-made granola can be expensive (especially if it’s gluten free and full of clean ingredients). So, in my mission of making as much of our food as possible from scratch, I set out to start making granola and I came out with this decadent Salted Chocolate Granola. It is free from gluten, dairy, and refined sugar (and also tastes like cocoa pebbles… shhh).

In my baking,  I always use fair trade cocoa powder. In my journey of making more ethical purchases, this is something that I chose to do. I never knew why people would talk about using fair trade cocoa or coffee, but as soon as I started researching the topic, I found out why… If you are unfamiliar with the topic of fair trade, please do some researching for yourself! So, that is why this recipe calls for fair trade cocoa.

Additionally, I used gluten free oats in place of regular oats and pink himylayan salt in my variation. It may be a placebo, but I really think it tastes better than regular salt! Without further ado, let’s get into the recipe! Everything about it is so simple, but the most important part is that you press the granola down so it is compact. This will make sure you get clusters instead of a bunch of oats. Make sure to take pictures and tag #simplynourishedgirl on Instagram!

5 Ingredient Salted Chocolate Granola

  • Yield: 12
  • Prep Time: 5
  • Cook Time: 25

Ingredients

  • 3 cups gluten free oats
  • 1/3 cup fair trade cocoa powder
  • 1/3 cup coconut oil
  • 1/2 cup maple syrup
  • 1 1/2 tsp salt

Instructions

  1. Preheat oven to 350 and line a baking sheet with parchment paper.

  2. Melt coconut oil and maple syrup over a gentle heat. Add in cocoa powder and salt. Stir until combined and remove from heat.

  3. In a medium sized bowl combine the 3 cups of oats with the chocolate mixture. Stir, making sure all oats are coated.

  4. Transfer to the baking sheet and firmly pat the mixture down until its about 1/4 inch thick

  5. Bake in the oven for 20-25 minutes. Let set for about 10 minutes and break off into clusters.
