This Sonoma Chickpea salad has quickly become one of my favorite things to throw together at lunchtime. Since going plant based, there hasn’t been many things that I missed from my previous lifestyle. Even though I don’t like the taste of meat anymore, chicken salad has been one dish I haven’t been able to get out of my head! I specifically have been craving a chicken salad sandwich made with red grapes. Crazy I know! But that craving inspired this recipe.
Chicken Salad has always been one of my favorite things my dad used to make. Chicken Salad Croissants were one of his go-to recipes for get togethers, birthday parties, my bridal shower, and even an event featuring Jimmy Buffet’s band. After their performance, the band came to eat a sandwich and said it was the BEST chicken salad they had ever eaten!
I definitely have a lot of memories around the dish. Maybe that family history is the reason I am thinking about chicken salad so much recently! Regardless, I was so happy to create something that I feel is equally as enjoyable and easy to whip up.
This Sonoma Chickpea Salad only takes 5 minutes to throw together and less than 10 minutes! The recipe is truly as simple as preparing the ingredients and mixing in a bowl. It’s perfect to enjoy in lettuce cups, on crackers, or as a sandwich. I recently enjoyed it as a sandwich and stored it in my stasher bag when we went out on the boat with family.
The best part about this recipe is that it can be made with just one bowl! I like to put the chickpeas in at the beginning and smash them up with the bottom of a mason jar or glass. You don’t want them to be completely mashed up! Just enough make it all stick together.
Then, cut up the remaining ingredients, add them to the bowl, and voila!

Start by draining/rinsing the can of chickpeas, then add to a medium sized mixing bowl. Use the back of a mason jar or glass to smash the chickpeas. Prepare other ingredients - quarter the grapes, chop pecans if needed, and slice celery. Add all ingredients to the mixing bowl and stir until completely combined.
