Imagine sitting down by a warm fire on a chilly fall evening. You’re curled up in a cozy knitted blanket and eating a delicious bowl of your favorite soup. What would that soup be? For me, that’s really easy to answer – tomato soup of course! I think the fact that I get to dip grilled cheese in it makes it even more appetizing. Grilled cheese and tomato soup is probably my number one favorite comfort food combo.
When I first started cooking for me and my husband, I always bought premade tomato soup. However, the single serving containers were $3 a piece, plus you don’t have control over the ingredients! So recently, I set out to find the perfect tomato soup recipe that was simple, nice and thick, but had no gluten or dairy and was able to be modified for vegans. I’m happy to announce that I have finally made a winner! This batch of soup fed 4 people, with leftovers enough to feed us all another meal! That’s a win in my book.
This recipe will be perfect as the cooler fall weather approaches. I ate mine with my all time FAVORITE grilled cheese. which uses this gluten free bread from Canyon Bakehouse, Kite Hill’s almond milk cream cheese, and organic raw cheddar. YUM!!! For a vegan friendly version of this soup, simply switch out the chicken broth in the recipe for vegetable broth.

Simple Tomato Basil Soup
Ingredients
- 2 28 oz cans crushed tomatoes with basil*
- 32 oz chicken broth
- 1 large sweet onion
- 3 cloves garlic
- 2 tbsp gluten free flour
- 3 tbsp olive oil
- 2 tbsp coconut palm sugar
- salt and pepper to taste
Instructions
Heat olive oil in a large pot over medium heat.
Dice onion and add to heated oil. Cook until soft and translucent. When the onions are done, add in minced garlic and sautee for about one minute until fragrant.
Mix in the flour until onions and garlic are coated and flour is lightly browned.
Add chicken broth, tomatoes, sugar, salt and pepper. Simmer for at least 30 minutes.
Top with fresh basil and serve with your favorite grilled cheese!
Notes
*The crushed tomatoes with basil I used were Muir Glen brand. If you can't find crushed tomatoes with basil, you can add plan crushed tomatoes and add fresh basil instead.
