I am so excited to share these stuffed jalapenos with you all. They were an amazing treat and even my picky little sister was a HUGE fan. If you follow me on instagram (@themrsmontes), you know that I have recently started using less dairy and have been trying to find non-dairy replacements for the one dairy product we love… CHEESE! That being said, I have been thinking forward to the holidays and how it’s always been a challenge to accommodate our guests who are non-dairy or vegan all together. Everyone deserves to enjoy get togethers with out having tummy problems after!
So, this is the first of many vegan friendly appetizer recipes that will be arriving on the blog throughout the holiday season! With tomorrow being labor day and football season upon us, I figured it would be fun to share this vegan stuffed jalapeno recipe. It will be perfect for get togethers and takes very little effort to put together.
This recipe uses my all time favorite non-dairy product, Kite Hill’s Almond Milk Cream Cheese, along with the new So Delicious Cheddar shreds (this one can only be found at Whole Food’s currently). You of course can substitute these for whatever brand you’d like or regular dairy products if you can tolerate it. My family just does much better without the dairy and I do think the products I used contributed to how delicious they were!
Now… here’s the kicker. In place of chicken, bacon, or any meat that may be used in stuffed jalapenos, these ones use… JACKFRUIT! This was my first time using jackfruit in a recipe and I have to say I was really impressed with the texture. I was super skeptical when I opened the can, but as it cooked and shredded up like chicken, I was truly amazed! The only negative about jackfruit is that nutrition wise, it is not a replacement for meat. It is very low in protein, but for recipes like that where its just there for taste and texture, it worked great!

Vegan Jalapeno Poppers
Ingredients
- 24 jalapeno peppers
- 1 medium sweet onion - finely diced
- 1 large red bell pepper - finely diced
- 1 package of Kite Hill almond milk cream cheese
- 1 cup So Delicious (or regular) cheddar cheese shreds
- 1 clove garlic
- 1 can Native Forest Young Jackfruit
- salt to taste
