Gingerbread Granola

By now, you should know that there are two things I absolutely love… Christmas and granola! I love all the seasonal flavors that Christmas brings, so I decided to tweak my Maple Cinnamon Granola recipe into Gingerbread Granola!

This Gingerbread Granola is not only tasty, it’s full of super clean ingredients! While I kept the recipe simple, you could absolutely add in other mix-ins, such as nuts, seeds, etc!

The method for this granola is about the same as any other granola recipe. First, melt the liquid ingredients in a saucepan or small pot (big enough to be able to mix in the 3 cups of oats). Then mix in all the spices while the oven pre-heats and mix in the oats til they’re all completely coated! Pour that mixture out onto your pan (I like to line mine with a baking mat like this one) and press down so it’s all in an even, compressed layer. Then bake!

After you bake and let the Gingerbread Granola cool, you should be able to break it apart into crunchy clusters. Yum!

Gingerbread Granola

Ingredients
  

  • 3 cups oats old fashioned
  • 1/3 cup coconut oil refined
  • 1/4 cup maple syrup
  • 2 Tbsp molasses
  • 2 Tbsp cinnamon ground
  • 1 tsp ginger ground
  • 1 tsp vanilla extract
  • 1/4 tsp nutmeg ground
  • 1/4 tsp cloves ground
  • 1/4 tsp sea salt

Instructions
 

  • Preheat oven to 350 degrees Fahrenheit and line a baking sheet with parchment paper.
  • In a small saucepan over low heat, melt the coconut oil. Once coconut oil is completely melted, turn off heat and add remaining ingredients, except for the oats. Whisk together until completely combined.
  • Mix oats into the liquid mixture and stir until the oats are evenly coated.
  • Pour mixture out onto the lined baking sheet. Press down so that the oats are in an even compressed layer. This will help the clusters form!
  • Bake for about 20 minutes or until the top of the granola is a nice golden brown. Keep an eye out because it can quickly burn. Start checking it at 15 minutes.
  • Once the top of the granola is golden and crispy, remove from oven and allow to cool for at least 30 minutes. Then break into clusters and store in your favorite container. Enjoy!
