The Best Hummus

Our household has a love/hate relationship with hummus. I love it because it’s delicious. My husband hates it because he can’t kiss me for hours afterwards due to the garlic I love to put in it. That being said, I still make it all the time and I’m here to share my method with you. This is the only hummus recipe you need!

The Ingredients

The ingredients for this hummus are incredibly simple.

  • 1 can of chickpeas and liquid
  • Tahini
  • Extra Virgin Olive Oil
  • Juice of 1-2 Lemons
  • Garlic Clove
  • Sea Salt

Before you get started, make sure you save the liquid from the chickpeas! This will help smooth out the hummus later.

The Method

The most important part of this hummus recipe is that you peel the chickpeas. I know it sounds like an obnoxious task, but I promise the end result is so worth it!

I originally heard this tip from Gaby Dalkin of What’s Gaby Cooking. My first thought was, “No way am I peeling each individual chickpea!”, but once I tried it, my life was forever changed!

The easiest way to peel the chickpeas is to simply squeeze at the top of the chickpea and it will pop right out of the skin. Put on your favorite podcast and get it done! It will only take you about 5 minutes to get through the whole can. Better yet, if you have kids, make them do the dirty work for you!

Next, add the chickpeas, tahini, olive oil, garlic clove, and 1 tbsp of lemon juice to the food processor. Oh, and a sprinkle of sea salt! Next, start blending that up. You will probably notice it’s not getting super smooth at first and that’s why we saved the liquid from the chickpeas. Start adding it a tablespoon at a time until you get a really smooth hummus.

Once the desired consistency is reached, give it a taste. It may need more lemon juice and salt, so just adjust to taste and blend again, ensuring that everything is combined.

Then, transfer to a serving bowl, drizzle with olive oil, and top with your favorite spice or seasoning. I really like to sprinkle Za’atar on top.

Ingredients
  

  • 1 can chickpeas
  • 1/4 cup tahini
  • 2 tbsp extra virgin olive oil
  • 2-4 tbsp aquafaba (liquid from canned chickpeas)
  • 1-3 tbsp lemon juice
  • 1 garlic clove roughly chopped
  • salt to taste
  • za'atar for topping (optional)

Instructions
 

  • Open can of chickpeas and drain aquafaba (liquid from chickpeas) into a separate bowl and save for later. Then remove skin from each chickpea and add to the bowl of a food processor. An easy method for peeling is just to gently squeeze the skin at the top of the chickpea and it will pop right out of the skin!
  • After all chickpeas have been peeled and added to the food processor, add tahini, olive oil, garlic, 1/4 tsp of salt, and 1 tbsp of lemon juice. Turn it on and let it start processing. Add chickpea liquid a tablespoon at a time, until it starts smoothing out.
  • Once you've reached a smooth consistency, turn the food processor off and taste. It will probably need more salt and lemon juice, so just adjust to your liking and process again until everything is combined!
  • Place in your favorite serving bowl, drizzle with olive oil, and top with your favorite spice or seasoning. I really like za'atar on this. Enjoy!
