I know I’m not the only one who loves a lightly sweetened, crunchy granola. A few years ago, I found a packaged granola in the stores that quickly became my favorite. Unfortunately, a high quality granola addiction can quickly come expensive and is also mega wasteful when packaged in plastic! This maple cinnamon granola recipe will satisfy that craving in a low-waste way and without worry of nasty ingredients or preservatives.
My favorite part about this recipe is that you can make it your own by adding ingredients that you need to use up! Nuts, seeds, chocolate chips, or shredded coconut are a few ideas for add-ins. I frequently mix in pecans and it is absolutely delicious!
This recipe is as simple as mixing the ingredients in a bowl and transferring to a lined baking sheet. I love to use a silicone baking mat when making granola (or baking anything for that matter!) and this is the one I use. Not only is it extremely useful, it’s also cute! Switching to a silicone mat has been a major win on my less waste journey.

Maple Cinnamon Granola
Ingredients
- 3 cups old fashioned oats
- 1/3 cup pure maple syrup
- 1/4 cup coconut oil
- 1/4 cup chia seeds
- 1 and a half tbsp cinnamon
- 1/2 tsp vanilla extract
- 1/4 tsp sea salt
- extra nuts and seeds of choice!
Instructions
- Preheat oven to 350 degrees F.
- Melt coconut oil in the microwave in a microwave safe container or in a small pan over low heat on the stove. Stir in maple syrup, vanilla, cinnamon, and salt until combined. Add liquid mixture and oats/chia seeds to a mixing bowl. Mix together to be sure all the oats are coated!
- Transfer mixture to a baking sheet lined with parchment paper or a silicone mat. Press down to make it into a compact, even rectangle. This is what helps the clusters form! Bake in the oven for approximately 25 minutes or until the granola turns a golden brown. Start checking it around 20 minutes. It may take up to 30 minutes, depending on your oven. Just keep an eye out to make sure it doesn't burn.
- When granola is done, remove from oven and let cool for 20-30 minutes before breaking it apart into clusters. Enjoy!
