Maple Cinnamon Granola
This maple cinnamon granola is the perfect crunchy snack for fall (or anytime of year)! All it takes is a few simple ingredients and 30 minutes to have a delicious, healthy snack ready to go!

- 3 cups old fashioned oats
- 1/3 cup pure maple syrup
- 1/4 cup coconut oil
- 1/4 cup chia seeds
- 1 and a half tbsp cinnamon
- 1/2 tsp vanilla extract
- 1/4 tsp sea salt
- extra nuts and seeds of choice!
Preheat oven to 350 degrees F.
Melt coconut oil in the microwave in a microwave safe container or in a small pan over low heat on the stove. Stir in maple syrup, vanilla, cinnamon, and salt until combined. Add liquid mixture and oats/chia seeds to a mixing bowl. Mix together to be sure all the oats are coated!
Transfer mixture to a baking sheet lined with parchment paper or a silicone mat. Press down to make it into a compact, even rectangle. This is what helps the clusters form! Bake in the oven for approximately 25 minutes or until the granola turns a golden brown. Start checking it around 20 minutes. It may take up to 30 minutes, depending on your oven. Just keep an eye out to make sure it doesn't burn.
When granola is done, remove from oven and let cool for 20-30 minutes before breaking it apart into clusters. Enjoy!
