Maple Cinnamon Granola

This maple cinnamon granola is the perfect crunchy snack for fall (or anytime of year)! All it takes is a few simple ingredients and 30 minutes to have a delicious, healthy snack ready to go!

Ingredients
  

  • 3 cups old fashioned oats
  • 1/3 cup pure maple syrup
  • 1/4 cup coconut oil
  • 1/4 cup chia seeds
  • 1 and a half tbsp cinnamon
  • 1/2 tsp vanilla extract
  • 1/4 tsp sea salt
  • extra nuts and seeds of choice!

Instructions
 

  • Preheat oven to 350 degrees F.
  • Melt coconut oil in the microwave in a microwave safe container or in a small pan over low heat on the stove. Stir in maple syrup, vanilla, cinnamon, and salt until combined. Add liquid mixture and oats/chia seeds to a mixing bowl. Mix together to be sure all the oats are coated!
  • Transfer mixture to a baking sheet lined with parchment paper or a silicone mat. Press down to make it into a compact, even rectangle. This is what helps the clusters form! Bake in the oven for approximately 25 minutes or until the granola turns a golden brown. Start checking it around 20 minutes. It may take up to 30 minutes, depending on your oven. Just keep an eye out to make sure it doesn't burn.
  • When granola is done, remove from oven and let cool for 20-30 minutes before breaking it apart into clusters. Enjoy!
