Sweet, Crunchy, Spicy… That’s exactly what these Maple Candied Pecans are. All you need is a few ingredients and a little bit of time. On top of being delicious, these pecans are also vegan, which you don’t often find in a candied pecan recipe!
When I was a kid, our local mall had a stand with fresh nuts and I remember them having these delicious candied pecans. They’d be served in a paper cone so you could walk around enjoying them while you shopped. That smell is so nostalgic to me and these pecans remind me so much of them.
The Method
I highly recommend using a ceramic nonstick skillet for this recipe. It cleans up so easily from the maple syrup. Additionally, use a silicone spatula for stirring!
These candied pecans are very simple to make on the stove top and require minimal ingredients. It’s extremely important to make sure you continue stirring frequently and watch the heat to prevent burning. Simply add all of the ingredients for the to a skillet, stir thoroughly to coat all pecans, and heat over medium.
Allow the mixture to bubble for about 3 minutes and then start stirring. If it looks or smells like something is burning, you can stir sooner. Reduce the heat slightly and continue simmering and stirring for about 12-15 minutes.
First, the mixture will thicken and get thick and shiny. Then, as you continue simmering and stirring, the syrup will crystallize on the nuts. That’s when it’s time to pull them off! Transfer to a sheet of parchment paper and allow to cool before eating.
I first made these candied pecans on Thanksgiving last year and they were the perfect addition to our cheese board. You can also enjoy them on top of my delicious Strawberry Goat Cheese Salad!
I hope you enjoy this recipe as much as I do! If you decide to make it, be sure to post on Instagram using #SNGeats
