The Most Simple Tomato Soup

Do you need a companion for your favorite melty grilled cheese? Then this recipe is for you. I truly believe that some of life’s sweetest pleasures are simple! Likewise, all you’ll need is minimal ingredients to pack maximum flavor into the most simple tomato soup. Here’s what you’ll need.

The Most Simple Tomato Soup Ingredients

Time to start talking about those minimal ingredients! For this tomato soup, you will simply need:

  • 2 28 oz cans of crushed tomatoes (preferably San Marzano)
  • 32 oz vegetable or chicken broth
  • 1 finely diced large sweet onion
  • 3 cloves garlic (minced)
  • 3 tbsp extra virgin olive oil
  • 2 tbsp all purpose flour (or gluten free if needed)
  • 1-2 tbsp sugar (if needed)
  • salt and pepper to taste

The Method

Start by heating a dutch oven with the olive oil over medium heat. You can always use a soup pot if needed, but I highly recommend investing in a good quality dutch oven at some point. It’s a staple in my kitchen and I use it almost every single day… no joke! This is the color I have.

While the dutch oven is heating up, finely dice your onions and mince your garlic. Once the pot is heated up, add the onions and saute for about five minutes, until they are translucent. Then, add the garlic and continue cooking for about 30 seconds. Garlic should be fragrant!

Next, stir in the flour, ensuring all the onions and garlic are coated. Then, pour in the broth and two cans of crushed tomatoes! Bring the soup to a gentle boil before covering and reducing heat to a simmer. Allow the soup to simmer for about 30 minutes!

Next, carefully give it a taste. This is where you’ll adjust your salt and pepper. If your tomatoes are super acidic, add in a spoonful of sugar! It’ll do wonders. After ensuring your flavors in order, it’s time to blend.

Let your soup cool slightly before using an immersion blender to fully blend the soup into a smooth consistency. This step is essential. If you don’t have an immersion blender, you can allow the soup to cool more and then use a regular blender to blend. Make sure you check the manufacturers directions to see what temperature is safe to use in your blender.

Ingredients
  

  • 2 28 oz cans crushed tomatoes preferably San Marzano
  • 32 oz vegetable or chicken broth
  • 1 large sweet onion diced
  • 3 cloves garlic minced
  • 3 tbsp extra virgin olive oil
  • 2 tbsp flour all purpose or gluten free if needed
  • 1-2 tbsp sugar if needed
  • salt and pepper to taste

Instructions
 

  • Heat a dutch oven or soup pot over medium heat with 3 tbsp olive oil. Finely dice onion in mince garlic.
  • Once the dutch oven is heated up, add the diced onions and sautee for about 5 minutes, until they become translucent. Then, add garlic and continue cooking for another 30 seconds, until garlic is fragrant. Add the flour at this point and stir to coat the the onions and garlic.
  • After a minute or two, add in the vegetable broth and tomatoes. Stir to combine thoroughly before raising the heat to bring the soup to a low boil. As soon as it starts to boil, reduce the heat to low and cover. Simmer for 30 minutes.
  • At this point, you can carefully taste and add a spoonful of sugar if the soup tastes too acidic from the tomatoes. Additionally, adjust salt to taste, depending on what the sodium level of your broth was.
  • Allow to cool slightly before using an immersion blender to smooth out any lumps and chunks. Continue blending until you reach a smooth consistency. Then, serve with your favorite grilled cheese sandwich and enjoy!
