- 3 cups old fashioned oats
- 1/2 cup pure canned pumpkin
- 1/2 cup coconut palm sugar
- 1/3 cup melted refined coconut oil or avocado oil
- 2 tsp pumpkin pie spice optionally, swap for 1 tbsp of cinnamon
- 1/4 tsp sea salt
Preheat oven to 350 F and line a baking sheet with parchment paper or a silicone mat.
If using coconut oil, melt over low heat (avocado oil does not need to be melted) and then transfer to a large bowl to mix with pumpkin, sugar, pumpkin pie spice, and salt. Stir thoroughly and then mix in the oats, ensuring all oats are evenly coated.
Transfer mixture to a baking sheet and bake for roughly 25 minutes. Remove from oven and allow to cool before enjoying!
