Ginger Carrot Miso Dressing

- 2 medium-large carrots
- 1 inch piece ginger peeled
- 1/2 garlic clove
- 2 and 1/2 Tbsp tamari (or reduced sodium soy sauce
- 2-3 Tbsp rice vinegar
- water to thin
- 1 pinch sugar if needed
- salt to taste
Roughly chop the carrots, ginger, and garlic. Add carrots, ginger, garlic, tamari, miso, 2 tbsp rice vinegar, and a splash of water to a blender.
Blend on high until all ingredients are blended in a smooth dressing. You will need to slowly add water by the tbsp until it comes together in a thin dressing-like consistency.
Check the taste, if it needs more acid, add the remaining tbsp of rice vinegar and add salt if needed. Blend again to combine all ingredients and then dress your salad with this delicious dressing. Enjoy!
