These delicious and moist banana nut muffins are directly from my Grandpa's kitchen. They use very basic ingredients, but result in something so delicious you won't be able to stop eating them.
Preheat oven to 350 degrees F. Grease a muffin pan or line with cupcake liners.
In a large bowl, mash bananas and then mix in sugar, melted butter, egg, and vanilla.
In a separate bowl, thoroughly combine flour, salt, baking soda, and cinnamon. Then gradually beat flour mixture into wet ingredients.
Stir in nuts and then fill each muffin liner to 3/4 full.
Bake at 350 F for 17-22 minutes, depending on your oven. Do a toothpick test to make sure they're done!
Let cool and enjoy.
Notes
This recipe could also be made into a loaf. If using a loaf pan, the baking time will be closer to 50-55 minutes. Reduce temp by 25 degrees if using glass.
