Pumpkin Granola

Tis the season for pumpkin everything! It may not be officially fall yet, but September is always the time when I start diving into all things pumpkin. These Cozy Pumpkin Granola Clusters are the perfect way to begin ushering in fall.

For those of us who DO love all things pumpkin spice, this granola is a real treat! It’s not too sweet, so it’s perfect for topping yogurt with or eating in a bowl with your favorite dairy free milk. I personally just like to keep them in a jar and snack on them when I need a little pick-me-up.

The Ingredients

I kept the ingredients for this pumpkin granola very nutritious and simple! When I originally wrote this recipe, I used refined coconut oil, which works great. However, I recently re-tested it with avocado oil and it worked like a charm! For this granola, you will need:

  • old fashioned oats
  • refined coconut oil or avocado oil
  • pure canned pumpkin (pumpkin puree, not pumpkin pie filling)
  • coconut palm sugar (you can swap this for regular sugar or brown sugar. Maple syrup or honey might even work, but try at your own risk!)
  • pumpkin pie spice
  • a pinch of salt

Cozy Pumpkin Granola Clusters Method

Begin by preheating your oven, to 350 Fahrenheit and lining a baking sheet. You can either use parchment paper or a reusable silicone mat. If you’re using coconut oil, your first step will be to melt it down. I like the option of avocado oil because you don’t have to dirty up another dish to melt it. Then simply mix everything but the oats together in a large bowl. Once thoroughly combined, stir in the oats until they’re all coated evenly. You can also add chia seeds, hemp seeds, or even pecans to this granola.

Next, spread it out onto the lined baking sheet. As with all of my granola recipes, it’s very important that you press the mixture down in an even, compact layer. This really helps with getting the clusters! Then bake in the oven for about 25 minutes. It could take anywhere between 25 to 30 minutes depending on your oven.

Eat this granola on top of a harvest smoothie bowl, on top of a yogurt, or by itself. The clusters are on the softer side and really comforting to just pick up and eat by hand. Just be sure to let it set for a bit when it comes out of the oven!

Ingredients
  

  • 3 cups old fashioned oats
  • 1/2 cup pure canned pumpkin
  • 1/2 cup coconut palm sugar
  • 1/3 cup melted refined coconut oil or avocado oil
  • 2 tsp pumpkin pie spice optionally, swap for 1 tbsp of cinnamon
  • 1/4 tsp sea salt

Instructions
 

  • Preheat oven to 350 F and line a baking sheet with parchment paper or a silicone mat.
  • If using coconut oil, melt over low heat (avocado oil does not need to be melted) and then transfer to a large bowl to mix with pumpkin, sugar, pumpkin pie spice, and salt. Stir thoroughly and then mix in the oats, ensuring all oats are evenly coated.
  • Transfer mixture to a baking sheet and bake for roughly 25 minutes. Remove from oven and allow to cool before enjoying!
