Raise your hand if you love hibachi! My hand is raised. However, one of the favorite parts of eating at the best Japanese restaurant back home was the salad with ginger dressing that they served you at the beginning. Those are the exact flavors that inspired this Ginger Carrot Miso Dressing.
This week, I found myself with a load of carrots that I bought from a girl here in Okinawa. Her father is a farmer and had a ton of harvest that he needed to offload! He couldn’t speak English, so she set him up a Facebook page and was selling almost everything for a dollar each. Given my mission to reduce waste, I didn’t want them to go bad, so I decided to make a delicious dressing with them.
The Ingredients
You really only need a few ingredients for this delicious Ginger Carrot Miso Dressing. In fact, most of them you probably already have!
You’ll need:
- carrots
- ginger
- garlic
- tamari (or soy sauce or coconut aminos)
- miso
- rice vinegar
The rest is just water to thin, and salt and sugar to taste!
The Method
Making this Ginger Carrot Miso Dressing is really as simple as blending all the ingredients up in a blender (this is the one I have). After that, you’ll just need to thin with water to your desired consistency and adjust acid, salt, and sugar to taste! Then, enjoy on a cold, crisp salad!

Ginger Carrot Miso Dressing
Ingredients
- 2 medium-large carrots
- 1 inch piece ginger peeled
- 1/2 garlic clove
- 2 and 1/2 Tbsp tamari (or reduced sodium soy sauce
- 2-3 Tbsp rice vinegar
- water to thin
- 1 pinch sugar if needed
- salt to taste
Instructions
- Roughly chop the carrots, ginger, and garlic. Add carrots, ginger, garlic, tamari, miso, 2 tbsp rice vinegar, and a splash of water to a blender.
- Blend on high until all ingredients are blended in a smooth dressing. You will need to slowly add water by the tbsp until it comes together in a thin dressing-like consistency.
- Check the taste, if it needs more acid, add the remaining tbsp of rice vinegar and add salt if needed. Blend again to combine all ingredients and then dress your salad with this delicious dressing. Enjoy!
