During this time of isolation and uncertainty at home, I think we’re all craving cozy foods. These banana nut muffins are the perfect fix for that. If I had to pick one nostalgic smell from my childhood, it would be the smell of banana nut bread wafting into my face as I walked into my grandparents house. The door would be unlocked just waiting for me to walk in and see my grandpa in the kitchen pulling it fresh out of the oven. Thankfully, I was recently sent that original recipe and I’m so excited to share it! While my Peepaw used to make mini loaves of banana bread, I turned them into muffins and they’re just as good!
The Method
The method for making these banana nut muffins is simple. First, mix together your wet ingredients. In a separate bowl, mix together all dry ingredients, except for the nuts. Then stir the dry ingredients into the wet ingredients and finish by mixing in the chopped walnuts. Finally, bake at 350 degrees F for 17-22 minutes, depending on your oven.
It’s that simple! Since we live in a Japanese apartment, we don’t have an oven. All of my baking is done in a small convection toaster oven, so it usually takes about 17 minutes for mine to get done. A larger oven might take a little bit longer. Just do the toothpick test to see when they’re done!
Additionally, these banana nut muffins could be made into a loaf! Simply extend the baking time to around 50-55 minutes.

The Best Banana Nut Muffins
Ingredients
- 3 bananas overripe
- 1 cup sugar
- 1 egg
- 1 stick melted butter
- 1+1/4 cup flour all purpose
- 1 Tbsp water
- 1 tsp baking soda
- 1 tsp cinnamon ground
- 1 tsp vanilla extract
- 1 cup walnuts chopped
Instructions
- Preheat oven to 350 degrees F. Grease a muffin pan or line with cupcake liners.
- In a large bowl, mash bananas and then mix in sugar, melted butter, egg, and vanilla.
- In a separate bowl, thoroughly combine flour, salt, baking soda, and cinnamon. Then gradually beat flour mixture into wet ingredients.
- Stir in nuts and then fill each muffin liner to 3/4 full.
- Bake at 350 F for 17-22 minutes, depending on your oven. Do a toothpick test to make sure they're done!
- Let cool and enjoy.
